Joe’s Beef Blend Chili

This chili packs in flavor at every. single. step. First, there’s the ground beef — Joe’s Blend is a rich combination of Teres Major, Sirloin, Short Ribs, and subtly sweet Brisket. Next, aromatics and spices come together in mouthwatering harmony, including notes of smoky chipotle and cinnamon. Rounded out with a burst of cherry tomatoes, kidney beans, and bright toppings like cilantro, you get a dish that’s deeply savory and incredibly satisfying. Ingredients
- 2 Tbsp olive oil
- 1 lb. Joe’s Blend Ground Beef
- 1 cup finely diced white onion
- 1 cup finely diced carrots
- 1 cup finely diced celery
- 3 cloves garlic, minced
- 1 tsp cumin
- 1/2 tsp paprika
- 1/8 tsp cinnamon
- 1/4 tsp chili powder
- 1/2 tsp chipotle powder
- 1 Tbsp tomato paste
- 1 can Citarella cherry tomatoes, lightly crushed by hand
- 1 can kidney beans, drained
- Salt and pepper, to taste
- Optional accompaniments: cilantro, scallions, diced onion, sliced jalapeño, grated cheese, sour cream, guacamole, crushed tortilla chips, lime wedges
Instructions
- In a large skillet over medium-high heat, add olive oil. Once shimmering, add ground beef. Cook for 4-6 minutes until meat is caramelized and just cooked through. Using a slotted spoon, transfer meat from pan to a plate on the side, saving any pan drippings in the pan.
- With pan on medium, add onion, carrots, celery, garlic, and spices. Cook for 5-7 minutes until vegetables are tender and begin to caramelize. Add tomato paste and cook an additional 2-3 minutes until color turns deep reddish brown.
- Add browned meat and can of cherry tomatoes, stir to combine. Reduce heat to low and cover, cooking for 5-7 minutes. Remove lid and add in beans and cook an additional 2 minutes. Taste and adjust seasonings as necessary.
- Spoon chili into bowls, garnish with desired toppings and enjoy!
